Inspired by visits to the artisan balsamic producers in Modena, northern Italy, this thick balsamic dressing pretty much sells itself. Local Valencia oranges slowly bubbling away with aromatics until they caramelise the vinegar into the perfect salad dressing or glaze… yum!
